30 Second Dark Chocolate Peanut Butter Pudding

You know that feeling when the chocolate craving hits?  It is the worst.  You want something sweet, and you crave the richness of chocolate, but most times you look around, only to find no chocolate dessert in sight.  There is a solution, and the best part is, it only takes thirty second of waiting!

What I'm talking about is my quick and easy, dark chocolate peanut butter pudding.  With only a few basic ingredients, this delicious, creamy pudding is the perfect treat.  All you gotta do is mix the ingredients in a bowl, pop it in the microwave, and there you have it!  This surprisingly easy dessert is perfect for almost anyone because it just so happens that it is gluten free and vegan!

Yes, there are times I just want a rich and chocolatey treat, but that is not how I came up with the idea of making this.  While viewing a few of my favorite food blogs, I came across many recipes with titles like Cake in a Mug, or Microwave Brownie, or whatever.  I wanted to try that concept out.  I attempted to develop my own recipe for a flourless chocolate fudge mug cake, but didn't end up with to much luck.  My first cake ended up a bit dense, probably due to over zapping it.

Ok, so my first cake wasn't all that good, but when I tried again, using a different recipe I created, I ended up with a thick, but creamy, texture.  Once it cooled, it thickened even more, and I decided that I had my recipe.  It turns out you don't need a great big slice (or mugful) of cake to satisfy yourself, you just need this pudding.

Sure, you can go ahead and drive all the way to your favorite dessert shop or whatever, but just know you can make a killer treat for a fraction of the cost.  All it takes is a mug, a few ingredients, and 30 seconds.

Note: This recipe makes a small serving.  While the portion you are eating might be smaller than you are used to, this dessert is so rich that you should be satisfied quickly.

30 Second Dark Chocolate Peanut Butter Pudding

Serves: 1

Time: About 2 minutes to prep, 30 minutes to cook


  • 1 tbsp cocoa powder
  • 1 tsp olive oil
  • 1 3/4 tsp agave
  • 1 tbsp creamy peanut butter
  • 2 tbsp + 1 tsp warm water
  • Small pinch of salt (if using unsalted PB)

In a mug or ramekin, stir together the cocoa powder, olive oil, agave, and peanut butter using a fork.  Slowly stir in the water, and mix until smooth.  Add in the salt (if using).  Pop in your microwave, and zap for 30 seconds.  Remove from the microwave, stir, and let sit a few minutes until cool enough to eat.  This recipe is great served both cold or hot.
