Shortcut Cake Donuts

One of the best breakthroughs in food has to be boxed cake mix.  Seriously, all you need is oil, water, and a few eggs and presto.  You have a semi homemade cake.

I got this idea after I realized there was boxed strawberry cake mix that had been sitting in our pantry for a month.  Truthfully, I am not a fan of boxed cake mix, so I wanted to update it a little.

I recently had killer donuts at VooDoo Donuts in Portland, Oregon.  After eating these amazing treats (and trying my first vegan donut) I was inspired to make my own.  Part of my inspiration came from trying these awesome donuts.

This is obviously not a delicious, yeasty donut.  I have to say it is pretty good though, especially for a boxed cake mix recipe.  These donuts are kid tested and approved.  They are great topped with a little frosting, oh, and sprinkles don't hurt, right?

Shortcut Cake Donuts

Time: 50 minutes (including cooling)

Serves: 12

  • 1 egg
  • ½ cup water
  • 5 ½ tbsp oil
  • 1 box strawberry cake mix
  • 2 tbsp flour
  • 1/3 cup premade frosting (optional)

Preheat the oven to 350F.  Spray 2 donut pans liberally with cooking spray or heavily grease with butter.  In a medium bowl whisk the egg.  Add the water and oil.  Whisk in the strawberry cake mix, then the flour.  Distribute between the donut pans to make 12 donuts.  Bake for 12-14 minutes or until a toothpick comes out clean.  Let cool before removing from the pan.  If you want to make a shortcut frosting, mix 1/3 cup of remade frosting with a teaspoon of water at a time until a desired glaze consistency is achieved.  Spread on top of the donuts and either serve or let dry before serving.
